Morning Glory Baked Oats

Ingredients

2 cups rolled oats
1/2 cup shredded carrots
1/2 cup apple, grated
1/4 cup walnuts, chopped
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 tablespoons maple syrup (or honey)
1/2 cup milk (dairy or non-dairy)
2 large eggs
1 teaspoon vanilla extract
1/2 cup raisins or dried cranberries (optional)
Directions:

Preheat the oven to 350°F (175°C). Grease or line a 9×9-inch baking dish with parchment paper.
In a large bowl, combine the oats, shredded carrots, grated apple, walnuts, cinnamon, nutmeg, and salt.
In another bowl, whisk together the maple syrup, milk, eggs, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir to combine. If you’re adding raisins or dried cranberries, fold them in now.
Pour the mixture into the prepared baking dish and spread it out evenly.
Bake for 35-40 minutes, or until the top is golden and a toothpick comes out clean.
Allow to cool for a few minutes before slicing. Serve warm with extra maple syrup if desired.
